
Summer is the perfect time for a picnic with friends. Whether you are heading to the beach or gathering at local park, I often myself stressing about what would be the perfect item to bring. As much as love trying new recipes from Pinterest, they can sometimes have mixed results. So, I love having a go-to recipe that I know will be hit!
Jessica Seinfeld’s no cook couscous salad is now my on go to for these occasions especially when I have limited time. I can make it in just 10 minutes and often have all the ingredients on hand.
But don’t worry if you are missing an herb or vegetable, the versatility of this recipe may be the best thing about it. You can add cucumbers, roasted red peppers, feta cheese or basil instead of the listed ingredients. I love to stop by the farmer’s market and pick up fresh seasonal, locally sourced items to change up the salad.
